For espresso, the focus is on achieving a balanced extraction that highlights a harmony of acidity, sweetness, and bitterness in equal measure.
For pour over, the flavors lean toward the brighter, more delicate notes, emphasizing the interplay of acidity and sweetness.
“Lyla” is a versatile blend, designed to shine across various brewing methods, from pure espresso to milk-based creations.

• Grind Size: Medium, 800–900 µm
• Grinder RPM: 500–700 rpm
• Grinder Settings:
• EK43: 7:30 o’clock position
• Option-O: Grind size 7, speed 5
• Comandante C40: 25 clicks
Water
• Water Hardness: 40–60 ppm
• Water Temperature: 90°C
Brewing Ratio
• Coffee-to-Water Ratio: 1:15
• Pouring Ratio: 5:5:5
Brewing Example
• Coffee Grounds: 15 g
• Total Water: 225 g
• Brewed Coffee Yield: 165 g
Pouring Steps:
1. First Pour: 00:00 - Add 75 g
2. Second Pour: 00:20 - Add 75 g
3. Third Pour: 00:50 - Add 75 g
Stop Extraction at approximately 1:30, when the brewed coffee reaches 165 g.
(The coffee-to-brewed liquid ratio is approximately 1:11.)
