Processing: Only fully ripe cherries are selectively harvested, then undergo 60 hours of aerobic fermentation in open fermentation tanks.

Nestled in the mountains of Palestina, Huila, at an altitude of around 1,650 meters, Finca Las Palmas is owned and operated by Efrén Echeverri and his family.

For the past 22 years, the Sinaí region has been their home. Six years ago, the family began focusing on specialty coffee, blending tradition with innovation to create their own unique approach to coffee production. Their 7.2-hectare farm is meticulously cared for and is home to a range of varieties, including Pink Bourbon, Yellow Bourbon, Caturra, and Geisha.

From cultivation to harvesting, every step is managed by the Echeverri family to ensure consistently high quality. After processing, the coffee is shade-dried for approximately 15 days under covered drying structures, allowing the beans to dry slowly while preserving the coffee’s intrinsic flavor characteristics.

Innovation lies at the heart of the Echeverri family’s philosophy. They continuously experiment with new fermentation techniques and pruning methods while maintaining deep respect for the land that has sustained them for generations.

As they continue expanding their coffee production throughout the Sinaí region, their goal is to share the exceptional quality of their coffees with more people around the world.
