EL Pergamino is one of the new estates Oasis visited during our recent trip to Panama.
The farm exudes a warm, family-run charm — traditional, humble, yet filled with dedication. Though still considered a newcomer among Panama’s many renowned estates, El Pergamino has already produced exceptionally high-quality coffee cherries with remarkable sweetness. Its rising reputation has quickly drawn attention from competitors around the world. In fact, El Pergamino coffees have already appeared on national competition stages, including the 2025 Taiwan Brewers Cup 4th place and the 2024 2nd place.
The farm’s growing area sits at around 1,800 meters above sea level, while its drying station is located higher, at approximately 1,920 meters — an interesting and unique setup. During our visit, we discovered that the coffee trees are planted along steep mountainsides, benefiting from ideal conditions with good shade and partial sunlight. Because of this, the drying process requires more direct sunlight, so the team built raised platforms at higher elevations to better control temperature and airflow during drying.
El Pergamino
El Pergamino is located on the western slopes of Volcán Barú, in the Bambito region of Panama. The farm sits at an elevation of around 1,800 meters above sea level. The soil is of volcanic origin, and the cool, breezy mountain climate—combined with sloped terrain—creates ideal conditions for producing high-quality coffee.
To better control the fermentation and drying processes, the estate built its post-harvest (processing and drying) facilities at a slightly higher elevation of about 1,920 meters. The cooler air and natural ventilation at this altitude help prevent over-fermentation during drying, preserving the coffee’s floral notes, sweetness, and clarity.
This thoughtful design—placing the processing station higher than the growing area—reflects El Pergamino’s dedication to precision and quality, ensuring that every batch maintains exceptional balance and purity in the cup.
