El Pergamino is one of the newer estates that Oasis visited during recent origin trips to Panama over the past two years.
The estate carries a classic family-run atmosphere, full of traditional charm. Although still considered a rising star among Panama’s many well-known coffee farms, El Pergamino has already produced exceptionally high-quality coffee cherries with remarkable sweetness. Because of this, it quickly gained attention from many competition-level brewers and baristas. During the 2024–2025 competition seasons, El Pergamino appeared frequently on national competition stages as a chosen competition coffee. In Taiwan alone, it was used by the 4th-place finisher in the 2025 Brewers Cup and by the 2nd-place finisher in 2024.
The cultivation area of El Pergamino sits at around 1,800 meters above sea level, while its drying area is located even higher, at approximately 1,920 meters—an especially interesting detail.
During our visit, we found that the coffee trees are planted along steep mountain slopes, benefiting from excellent shade coverage and partial sunlight exposure. Because of these cooler growing conditions, additional sunlight becomes essential during drying. For this reason, the processing and drying facilities are positioned on elevated platforms at higher altitude, allowing for better control of the drying environment and greater consistency during post-harvest processing.
